Mullet Fillets

  • 'Kikkoman' Teriyaki Marinade

- Simply marinate for 2-3 minutes before cooking.
- Place flesh side down on well oiled frypan or BBQ, turn over onto skin side down after a minute or 2.

Salmon Fillets

  • 1 Tbs Brown sugar
  • 4 Tbs 'Kikkoman' Teriyaki marinade
  • 1 tsp Crushed garlic
  • 1 Tbs Olive Oil

- Mix ingredients together in small bowl and pour over salmon fillets.
- Marinate for 2-3 minutes before cooking.
- Place flesh side down on well oiled frypan or BBQ, turn over onto skin side down after a minute or 2.

Luderick Fillets

- Coat fillets in plain flour (add seasoning for a change eg. lemon pepper, or salt & pepper OR garlic salt).
- Cook in frypan or on BBQ for 2-3 minutes, turning once.

Snapper or any whole fish

- Gut it and scale it, then put salt & pepper inside it and fill it up with minced or fresh garlic. Wrap it in foil and put it in the oven or on the BBQ and leave till cooked...and enjoy!!

- Gut it and scale it. Score the flesh put garlic/salt/pepper/lemon juice on the outside then lay it down on a bed made of onion and tomato slices on foil. Wrap it up and cook it on the BBQ, grill or oven.

- To crumb any fish fillet. Dip fish in an egg and milk mix (1 egg and a Tbsp of milk), then roll in a bowl of bread crumbs or rice crumbs. Great fried in a pan of hot oil.

TARTARE SAUCE

- Place an egg yolk, 1 Tbsp lemon juice and 2 Tbsp mustard powder in a bowl of a food processor until mix is thick.
- While processor is still running add 1 cup light olive oil in a thin steady stream until creamy. Place in another bowl.
- Add 2 Tbsp thinly chopped capers, 6 baby gherkins, 2 finely chopped shallots, 1 Tbsp parsley, 1 Tbsp dill, 2 Tbsp chives and stir together.
- Season with S & P.

SEAFOOD COCKTAIL SAUCE

Combine 1/4 cup tomato sauce, 1/4 cup pouring cream, 1 Tbsp fresh lemon juice, 1 tsp worcestershire sauce, dash of tabasco sauce, salt & pepper.

BATTER MIX

1 cup plain flour, 1 tsp baking powder, 1/2 tsp salt. Mix together. Add 1/2 cup milk and 1/2 cup water slowly and beat until smooth. Dip fish in batter, let excess drip off. Deep fry till golden brown.

CHEESY MORNAY SAUCE

- Place 1 Tbsp of plain flour and 1 Tbsp of butter in a saucepan and mix together while on the heat and stir for 1-2 minutes or until combined.
- Gradually add 1 cup of milk stirring continuosly. This will make a thick white sauce.
- Add 1/2 cup grated cheese.
- Take off the heat and stir.
